‘Noble Rot’ - while it may not sound all that appealing - produces highly prized, intensely sweet, and complex wines from grapes affected by the Botrytis cinerea fungus - rotten grapes producing liquid gold.
Dehydrating grapes on the vine, concentrating sugar and acids, resulting in rich, high-alcohol, and often high-priced wines characterised by racing acidity balancing extreme sweetness, with notes of honey, caramel, apricot, nut, and spice.
