A Pouilly-Fumé from Alain Cailbourdin, named after the tiny fossilised oysters found in the Kimmeridgian limestone of the vineyard. Sauvignon Blanc from these soils is precise and mineral, with citrus, gooseberry and a smoky, flinty finish typical of the appellation.
